2023 Testalonga El Bandito I Wish I Was A Ninja

This pét-nat of Colombard is instantly filling and surprisingly easygoing, with an ABV of 8.5%. Fruity notes of ripe apple, sweet melon, lemon zest, and juicy white peach jump out of the glass in this fizz. On the palate, there is an off-dry sweetness that is very tasty, matched by a sharp acidity and a bubble that quenches your thirst. This bottle's title says it all: it's for having fun with friends and shouldn't be taken too seriously.

Made with 100% Colombard grapes that were grown on dry, trellised land on granite grounds that had broken down. The grapes are picked by hand, and fermentation starts in stainless steel vats. The wine is then put into bottles with crown caps to finish fermentation and capture the bubbles in a pét-nat style. After 10 months, the bottles are degorged, and there is only a tiny bit of sugar left. This gives the wine a good mix of sugar, acidity, and fizz.
