「雪の窓」是丹丘蒸留所跨越地域界限,於日本北海道東川町設立酒廠後的首款里程碑之作。這款氈酒如其名,彷彿透過一扇窗,凝視著大雪山的純淨雪景。

有別於一般氈酒,它以北海道東川町盛產的酒米與「米麴」為基調,賦予酒體獨特的旨味(Umami)。水源採用被評為「平成名水百選」的大雪山旭岳融雪水,並融合了從當地森林採摘的椴松嫩葉(Todo Fir)、薰衣草、柚子及柑橘等 14 種草本植物。這是一瓶封存了北國森林氣息與純淨水源的工藝結晶。

  • 風味筆記: 雖然含有薰衣草,但風味絕非柔弱的花香調。初調是充滿力量感的椴松葉與森林氣息,入口乾淨俐落,帶有豐富的柑橘與果香層次,尾韻展現出剛強而優雅的烈酒骨幹。

  • 飲用建議: 風味紮實,非常適合調製 Dry Martini 以感受其冷冽質感,或製作 Gin & Tonic 享受草本清香。

Yuki no Mado (Snow Window) Hokkaido Craft Gin

"Yuki no Mado" (Snow Window) marks the beginning of a new chapter for Tankyu Distillery. Crafted by the Hong Kong team behind Perfume Trees Gin at their new distillery in Higashikawa, Hokkaido, this spirit captures the pristine terroir of Japan's snowy north.

Distilled using snowmelt water from Mt. Asahi (one of Japan’s top 100 water sources), this gin features a unique base of local sake rice and Rice Koji, adding a subtle depth of Umami. The botanical blend highlights 14 ingredients, including fresh Todo Fir needles foraged from the surrounding forests, lavender, and yuzu. It is a breath of crisp mountain air, bottled.

  • Tasting Notes: Despite the inclusion of lavender, this is a robust, pine-forward gin. It opens with the fresh, resinous aroma of Todo Fir needles, followed by complex layers of citrus and fruit. The palate is crisp and punchy, delivering a strong, structured finish that reflects the hardy nature of the snow country.

  • Serving Suggestion: Its robust character shines in a classic Dry Martini, or served as a refreshing Gin & Tonic to open up the forest aromatics.

Tankyu Distillery is a visionary project led by a Hong Kong team, expanding their craft from the city streets to the snowy peaks of Hokkaido. Located in Higashikawa at the same latitude as Scotland, the distillery benefits from pure water sources and rich local agriculture. Supported by the local government, this facility represents a fusion of cultures. While their highly anticipated whisky matures (due 2028), Yuki no Mado stands as the first testament to their dedication to cross-border craftsmanship.
