The Ruschena is the only wine in the Cascina Tavijn line-up sourced from outside the family's own vineyards, drawing from a tiny, exceptional plot tended by their neighbours, the Ruschena family—from whom the wine takes its name. This $100\%$ Ruché comes from vines over $70\text{ years}$ old, rooted in particularly calcareous soils and farmed with the same meticulous organic principles as Nadia Verrua’s own estate. The winemaking is gentle and slow: whole Ruché berries are destemmed and given only a soft press before a protracted, cold, native-yeast fermentation and maceration lasting up to two months in the cellar. The wine then rests for a year in stainless steel before bottling. This patient, zero-sulphur, zero-filtration method captures the rare, complex beauty of old-vine Ruché.
