Michel's certified organic vineyards, with their 40-year-old vines planted in clay and limestone soil, provide the exceptional grapes for this wine. Following a meticulous hand-harvest, the wine undergoes a 15-day maceration on the skins before being aged for 9 months in foudre, resulting in a wine that is as characterful and precise as the man who made it.
