From the winemakers Alice and Olivier De Moor, this 2023 "Bourgogne Chitry" is a beautiful expression of Chardonnay from just outside the Chablis region of France. The De Moors are known for their meticulous, hands-off approach to winemaking, and this wine is no exception. The grapes are farmed organically from Chitry-le-Fort's limestone-rich soils, which gives the wine a strong mineral character. After a wild fermentation, the wine is aged on its lees in old oak barrels, resulting in a vibrant, textured, and expressive wine. It is also certified as vegan.
