2022 Bel-Air et Clardy Chablis

This wine is a mix of their Bel-Air and Clardy parcels. The limestone in the Bel-Air parcel is more rocky, while the limestone in the Clardy parcel has a higher amount of chalk. It's not a surprise that the wine that comes out of this is very salty. To keep things sharp, the wine is aged in a mix of old barrels, foudre, and enamel-lined tanks. As usual, there is a lot of detail, accuracy, and edge. There is also a lot of fruit: a crisp apple, a ripe pear, and a salty lemon.
In the Chablis appellation, Alice and Olivier De Moor were among the first producers to break with custom and make wines that really showed what the area, which is so well-known in Burgundy, was all about. All work in the farm is done in an organic way, and each grape is picked by hand. After spontaneous fermentation, the wines are left to rest for a while before they are bottled. Nothing is added or taken away.
