This exquisite dry white hails from the prestigious single-vineyard Roche aux Moines in the Loire Valley, a site famed for producing some of the world's most long-lived Chenin Blanc. The grapes are meticulously hand-harvested to ensure optimal selection, then spontaneously fermented using natural yeasts in a blend of temperature-controlled tanks and old oak casks. This careful approach captures the pure minerality and power of the terroir, resulting in a complex, structured, and age-worthy wine that beautifully balances purity, concentration, and finesse.
