Named for the "feel-good" hormone, this exceptional non-vintage (NV) blend is an ode to spontaneity and curiosity from its maker. Born as a "Stockinger Surprise" in a large $3,000\text{ litre}$ oak barrel, this wine features a base of dominant Grüner Veltliner, blended with Chardonnay and Riesling from the organically farmed Slovenské vineyard in Moravia. The winemaking is entirely natural: the fruit is foot-stomped and given overnight skin maceration before a long, slow press. Fermentation occurs spontaneously, and the wine is aged in the Stockinger barrel in a unique, continuous solera style. Bottled without fining, filtration, or any added sulphur, this expressive white is allowed to live its own life, resulting in a complex, textural, and genuinely joyful wine.

Aroma & Palate | A complex and textural white with powerful elegance. The palate is bone dry, exhibiting refreshing acidity and deep minerality drawn from the loess soils. Expected aromas include dried stone fruit, spice from the long oak aging, subtle nutty notes, and the herbal complexity of Grüner Veltliner. The long aging and solera method give it great balance, depth, and a persistent finish.
