Dane Johns, co-founder of Momento Mori, created Nikau Farm as an intensely ambitious, high-ethos personal project in Gippsland. This microscopic production is rooted in just 1.5 acres of organically farmed vines, surrounded by a thriving natural ecosystem. The unique terroir consists of ancient compact sandstone from an old seabed with a rich organic topsoil. The yield is deliberately ultra-low, resulting in a mere 500-700 bottles per plot—a truly rare find. Following the name, the vinification uses amphora or granite, relying on spontaneous fermentation and aging in steel tank, with no additives, no pumps, and no oak, yielding the purest possible expression of this unique Australian site.  

Aroma & Palate | A white blend (Pinot Grigio, Pinot Gris, Chardonnay, Sauvignon Blanc) defined by its purity and finesse, despite the concentration derived from ultra-low yields. The palate is tense and mineral-driven, reflecting the granite and sandstone soils, with precise notes of pear skin, citrus pith, and a slight herbal quality. The clean, slow fermentation delivers a dry, refreshing texture with exceptional length.

Nikau Farm ‘Tonimbuk Amphora Granite’ 2020  Dane Johns(Momento Mori 的聯合創始人)在 Gippsland 創立 Nikau Farm,是一個宏大而高道德標準的個人計畫。這個微型生產的莊園僅有 1.5 英畝 葡萄園,以有機耕作。其獨特的風土由古老海床的緊實砂岩組成。產量極低,每塊地塊僅產出 500-700 瓶。釀酒依循其名,在陶罐或花崗岩中陳釀,採用自然發酵和不鏽鋼槽陳年,無添加、無泵、無橡木,帶來了這片獨特澳大利亞風土最純粹的表達。  

風味 | 這是一款以純淨和精緻著稱的白酒。酒體緊張且充滿礦物感,反映了花崗岩和砂岩土壤的特點。口感帶有精準的梨皮、柑橘內皮和輕微的草本氣息。乾淨、緩慢的發酵提供了清爽的質感和非凡的悠長收結。
