2021 Quinta

Deep colour like the inky red Saperavi grape, but light and fragrant like the white Mtsvane grape. Fruity notes of blueberries and dark cherries, a smooth texture with a touch of bitter chocolate, and well-defined tannins. Made the traditional way, in a qvevri, which is a clay pot that is buried in the ground to let the heat of the earth flow through it. This makes the right environment for a natural fermentation that doesn't need to be controlled by temperature. A method that is as old as it gets.
