This clean, crisp Chardonnay is an outstanding example of the quality emerging from the Ningxia region of North-West China, often described as the "Wild West" of the wine world. Pingyao Wines capitalises on the extreme terroir—high altitude ($\sim 1,200\text{ m}$) and arid climate—which naturally preserves acidity and freshness. The fruit, sourced from young vines in a single vineyard, is handled with meticulous care. The entire vinification process, including fermentation and aging, occurs exclusively in stainless steel. This deliberate choice avoids oak influence, resulting in a supremely pure, light and crisp white wine that perfectly captures the cool, mineral character of the high-altitude site.

Aroma & Palate | A fresh, clean, and crisp white, defined by its lack of oak influence. The notes lean strongly towards crisp green apple and fresh white peaches. Although initially reserved, breathing the wine allows more ripeness and complexity to emerge. The light-bodied structure and vibrant acidity make it highly refreshing.
