Despite the region's reputation for bold Bordeaux blends, Pingyao Wines has focused on harnessing the cool evenings and high altitude ($\sim 1,200\text{ m}$) to produce an elegant expression of Pinot Noir from young vines. The fruit is treated with minimalist care: fermentation and aging take place entirely in stainless steel, ensuring the purity of the bright fruit shines through. The result is a wonderfully fresh and juicy red with light, present tannins, plenty of invigorating acidity, and a seamless, elegant fruit profile that showcases Ningxia’s surprising versatility.
